What I want to specifically do is trigger a "Pedal Down" sample to play when
I press my sustain pedal, and a {Pedal Up" sample to play when the pedal is
released.

With respect to see some 64, any value above 64 is pedal down and any value
below 64 is petal up. So, if you assign a value of zero. If you have a value
of 127, you will have them down.
