You need to be careful that your client's head phones aren't too loud or you
could get click bleeding into the track. Many vocalists really like their
phones loud, and it can be a problem you need to watch out for. Sometimes if
you can get a singer to take one phone off, they can hear themselves better
thereby minimizing track and click bleed.

If your client's wearing headphones, the metronome shouldn't get recorded
from the mic picking it up from your monitor speakers.
 
You'll most likely want a piano track separate from the vocal track. The way
I understood your message, you want to record the piano as a midi track; if
you're just going to record the piano as an instrument unto itself, you
really won't need to worry about doing anything midi with it at all,
especially if you're just looking to get the audio from it. If the
instrument's a stereo unit, just assign your inputs accordingly in sonar. I
don't know what sort of sound card you have, but if it has enough ins and
outs on it, you can assign your vocal track to a separate input on your
sound card; then arm the piano track and vocal track so they'll be recorded
simultaneously. I don't think you really want to record the piano and vocal
on the same track.
 
If I were faced with this same scenario, I'd either have to record the piano
part, then the vocal, or I'd have to sub-mix everything and patch the mixer
into the sound card.
 
Question: are you wanting to record the midi data so you can use another
perhaps better quality piano instrument to play the part?

        Hello,
         
        I'll be recording a client tomorrow who is a pianist. He'll be
recording his piano track and his vocals at the same time, and I have 3
questions:
         
        1. I'll be using the metronom click, but how do I get it where the
metronom will not get recorded onto the vocal track?
         
        2. The piano will start out as a midi track. If the input of that
midi track is not assigned to the same input as the vocal track, the piano
will not get recorded onto the vocal track, correct?
         
        3. The piano I'll be using does not have a USB port. So I'll be
using its midi in and out with a midiman interface. I haven't done this in a
while, but am i remembering correctly that I need one cable from the midi in
of the piano to the midi out of the interface, and one midi in from the
interface to the midi out of the piano?
