Hi again Soronel!

I forgot to mention in my last message that I'm proofreading "CookWise: The Hows & Whys of Successful Cooking with over 230 Great-Tasting Recipes" by Shirley O. Corriher. I'm in the section on candy making and she talks about different kinds of candy making in the chapter I'm in and so many other things about all kinds of cooking from bread, dessert and everymajor category in between. It's like going to cooking school when reading her book.

Water is easy but there are other fluids in cooking that can be even
worse, candy mixes as just one example. Not only do they reach higher
temperatures they stick to the skin.

I haven't figured out how to do it safely since going blind. :( Was
barely safe for me even when I could see.
