I've used OmniPage Pro OCR software (from ScanSoft) to convert pdf files to 
Word files.
It does a pretty good job on straight text - lots of tables/graphics can cause 
a very different result.

Another option is Acrobat 5, use the Save As option to extract the text.

  If you have access to OmniPage Pro OCR software, give that a try -- it
  claims to accept input from PDF just as it would from a scanner.
