There is no need to go through GIF. Simply export as a greyscale Sprite. The greyscale option is available with any kind of export in 256 (or fewer) colours, so to get it for Sprites, you need to switch to 256 colours first. And, of course, as Richard has remarked, switching to a greyscale screen mode is even easier, though I would not do it via Boot>Configure>Screen as he suggested, because that would configure it permanently. Just go to the Display Manager and switch from there.
