goes on metal to metal contacts.

I have been replacing some of the red pinch rollers, and i thought they
needed grease but i didn't know which grease. I have two different kinds, one
says grease multi-purpose and one says grease EMB Polymer. which one?

No that is not correct. Both sides of the hub need a small tab of grease
as they are both contact bearing points.
The red pinch rollers also need a small amount of grease applied to the
inner bearing post that they rotate on as well.
An IMPORTANT point to remember is NOT to allow ANY grease to come in
contact with the surface of either roller. It has been found that any grease on
either of these surfaces will result in the thread feeding off to the left side
of the roller. If grease does get on these rollers, clean with soap and water,
do not use any alcohol product.
