Hi,  

I don't have Outlook 2007  but have Outlook 2010, but the process should be
similar.

Open the message you want to add a contact from.  Tab or Shift+Tab to the
header containing the contact.  Press Enter or double click, and you'll be
able to add or edit the contact information.
