We just move the .pst file onto our NAS and change the users mail profile to
point to it. Very few of our users have ever setup local .pst files so it's
not much of an issue for us.

That's what we do. The potential heartache of the Chief Execs local PST file
vanishing is worth the network and backup overhead.

I agree. But what i mean, is that by default pst files are on the client's
workstation. I was thinking about placing them on a central location and
then backing them up locally.

PST files are just files, so back them up with your normal file backup
scheme.
