[windows2000] Field from on exchange 2003

Hi,
One of my customer use exchange 2003, with Outllook (2000, XP, 2003). Only
exchange account is configuring on the client.
When they send emails, the field from is incorrect and correspond to the
user logon. Can i change somewhere this value ?
