If you run vlans :-

You could put the server in a new VLAN different from the current server.

The client will broadcast DHCP discovers, the network has to forward requests to
a server if its not on that VLAN. If there is no forwarding on the client vlan
the DHCP server on the client vlan will be the only one to receive the discover.

I don't think so, DHCP is designed so that servers will share load
automatically, I don't think there is any built in way to cut one out of the
loop.  The best fix would be to go to management and request a change.  I
suppose you could install desktop firewalls and block the address of the
unwanted server or something similiar.  Why is your network set up this way,
and why don't you have control?
