Neil,

I had this problem before.  There are 2 approaches you can take.  1.
locking down the root drive (which can cause any number of headaches down
the road) or 2.  Hiding the server drives.  We took a combination of the
two...locking down where absolutely necessary and hiding the drives.  When
the users don't see the drive as a save option they just don't save there.
Since we've hidden the drives, our problem of documents being saved to the
server drive has ceased.

Unfortunately the "drive hiding" idea was implemented by a former admin who
left me no documentation on where he did it.  All I know is that he did it
via the registry.

Hope this helps somewhat.  Anyone know where in the reg. you can "hide" a
drive from "My Computer"?

The settings I have (and have had for nearly 5 years, on my Citrix servers -
I mention this, to point out that it is clearly tenable) is only read-only
NTFS permissions for users on *all* areas of the servers local drives.

I also hide them by policy.
