* Configure the server to allow shadowing without prompting
* Create a policy that allows user to user shadowing without input 
* Create a session permanently running with the application you wanted to
view in it running as a specific user.
* Publish to the remote user, a script that automatically starts a shadow
session to the running application. 
 
Or publish a video/powerpoint slide of the application in use?

Is there anyway of having an application launch that users would not be able
to click on anything from within the application, i.e. tabs or menu items?
The only thing they could do is to close the application.
 
Any ideas?
