You could put in a username and password of an account with access when you 
create the published app can't you?
(or you could create an ica file from the published app and add username and 
password into the ica file and post a link to the ica file

I would like to publish a Exchange Public Folder (Calendar) as an application 
in my Farm; I don't use OWA and would like for it to be a real-time snapshot of
