Well, best practices are to apply security hotfixes/patches when they are released (be sure to test first). You can use hfnetchk to see a list of HF that are not installed. As far as additional Citrix/MS Hotfixes, I always go by the KISS principle. If it ain't broken, don't fix it. If you are having an issue (say the print spooler crashes), then install the appropriate Hotfix.
