Birch is the way to go. It's a good natural wood veneer. If you don't take care of it it will crack and peel. But it is real affordable wood.

doing is removing  the westfalia plates off of the
original cabinetry and
putting them on  the new stuff just for a personal
kind of touch.

what's ya'lls take  on this? the main question is
should i keep the
originals? they are in  decent shape, not great but
decent.
