I got as far as going to contacts, doing a select all from the edit menu but
then copy was not available, the only option was paste, any further
thoughts. cheers!

I'm guessing you can do it in the same way you'd do it on a series 60 phone.
Mark all your contacts then in the options menu arrow to 'copy' then enter
on sim directory.
