Just hit the 'C' key for the ones you want to delete. For rename, hit Options and you should have editing options there. Note (at least on my N95 8GB) it was not possible to directly delete the annoying preset Nokia folders for Music, Video, etc, although you could delete the bookmarks inside the folder. I did have a note somewhere that gave the registry entries you had to hack to do this, but in the recent upgrade chaos it's gone walkabouts.
