Chip, I have a hand out I did for a seminar at one of the FCB conventions.
It mainly focuses on the gestures for Voice Over. I have print and braille
copies, I should also be able to find the txt file if you are interested.

I would appreciate any recommendations for books designed to teach someone
who is blind how to use the IPhone. I believe the APH has some for sale,
but wanted to hear from people who bought some or read reviews, as to what
was great, and what should be skipped

I never have bought a smart phone yet, but I am pretty sure I'm going to go

I have heard it is coming to Android soon, NFB and Google are pretty tight.
Also there are a couple apps you can try that do a pretty good job. Both
have free versions.
