A dessert or pudding-like snack. She also looks for interesting veg-based recipes, like shredded carrots with raisons. Many of the kids like pickles as a snack, baby gherkins being especially sweet, as are black olives(pitted). Some even like sliced pickles on peanut butter(no jelly!) sandwiches, especially the boys. Boys tend to have strange taste buds. There are corn and potato fritters that can be serve like pancakes with either a light amount of syrup or jam. Also, you'd be surprised the number of vegs you can dice up into tuna, chicken, turkey, ham and egg salads. I've found celery, onions, bell peppers of all colors, shredded carrots, etc. Experiment with that in small amounts until you find what works. Oh, and in our house we use Miracle Whip instead of mayo, but your tastes may vary. Rob also swears by juicing. Every morning the juicer is buzzing to gush forth one or more of her formulas. A basic one has sugar beets, carrots, apples(no core/seeds), and celery. She also stocks up on several flavors of Dr Brown's sodas, like Celery. Main thing is, get it tasting somewhat sweet, don't tell them what's in it, and it gets sucked down wholesale.
