Both script and screen will let you capture the entirety of a terminal
session.
Once inside a screen session entering the Ctrl-a H command
will start logging your screen to the log file of that screen
which by default is screenlog.x, where x is the screen number assigned in order
of screen creation.
e.g. screenlog.0, screenlog.1, etc.
Entering the command script begins logging the
screen activity of your session until you type the exit command. By default the
log file will be named typescript.
The man pages will give you many more options for both screen and script.
