Myself, I'm using Eclipse since ages. However, this should do the trick:

export CVS_RSH=ssh

cvs -d:ext:username@xxxxxxxxxxxxxxxxxxxxxxxxxxxxxx:/cvsroot/simplemail 
co -P simplemail


(last two lines are one command)
