If the pour gets too close to the traces, it drives their impedance down.
Any good field solver based tool will show you how much.

Let's say you are routing diff pairs as Microstrips and you have ground
pour on the top and bottom layers. Does the ground pour make the diff pair
traces Coplanar wave guides?
Does the CPW affect the trace impedance.
