Hi Pietro,
you get best flexibility with a single Layer Flex, thus try coplanar coupled
traces. Instead of a full plane you can also use traces underneath the signal
trace as the return current will only take this path. the remaining area can be
crosshatched or even left empty if the transition to the Flex PCB is well
designed.

Hello experts.
I just came across an issue I'm trying to understand.
The problem: controlling the impedance on 2 layers flex PCB (1 signal, one
reference plane) 5 to 10 cm long, connecting two PCBs
The question: to have a good flexibility we should crosshatch the plane but to
control the impedance it is better to have a uniform not hatched plane.
Probably controlling the hatch pitch and width we can minimize the
discontinuities but do you have any recommendation ?
Can you suggest anything to read about it ?
