I have used citric acid as a preservative.. I use it to soak apples, pears,  
and some other products before dehydrating them, then use the dry product in 
my  dogs' food with water added to re-hydrate. Never had a problem with my 
dogs'  stomachs. I prefer the citric acid or lemon juice itself to the cousin 
of  
anti-freeze used in commercial prepared dog foods. I suppose it would depend 
on  the amount and source of the citric acid. Others have used sulfites as  
preservatives as well...known carcinogens. Debbie
