I think I will make peggy's soup. I grew purple potatoes this year. I think I
will make purple potatoe soup :0)

Subject: [ SHOWGSD-L ] potato soup recipe again...
I'm set to no mail until I get a properly operating computer...I can send
but not receive. BUT, thanks to Facebook, I have heard from several people
that the Pity Party wants my potato soup recipe again. OK, here it is:

Keep in mind that I never measure anything, just add more stock/more
water/more potatoes/more salt/pepper until I think I have enough and the
consistency is right and it tastes right!!!
Ingredients:
1 large white onion
1 large leek
a couple of carrots
some potatoes
1 beef stock cube
Salt & Pepper to taste
put a little olive oil and butter in the base of a large, deep pot
chop the onion (sliced or diced - doesn't matter) and slowly soften
slice the leek and add to the onion, and continue softening.
Make up a pint of beef stock (might have to make up more or add more water)
- I prefer the Knorr stock cubes to anything else - and add to the pot
keep heat on simmer
slice one of the carrots and a few potatoes and add to pot.
Simmer, covered until potatoes and carrots are soft
Add salt and pepper to taste
when potatoes/carrots soft put in blender until ingredients blended
together - this should give you a slightly creamy consistency.
Put back into pot on simmer and dice more potatoes and this time, grate in
another carrot or two
Cook until potatoes soft but not mushy.
That's it.......................
It tastes even better the next day, having thickened more overnight.
Another addition which makes it delicious: One you have served up, spread
butter on your favorite roll, tear the roll into bits and drop them into
the soup.
If anyone wants my squash soup recipe, let me know...just not by email!
