I sometimes order food from Hawaii that is shipped frozen and takes a couple of days from shipping to delivery. It arrives packed with the frozen gel packs (like the ones used in shipping vaccines) in a box lined with styrofoam. You could probably buy a styrofoam cooler at a camping store, pack the food with gel packs around it and enclose the whole thing in a cardboard box for protection - just make sure you can open it and reseal it if the airline wants to inspect it. I don't think a roll of packing tape would be on the 'disallowed items' list. If it keeps food frozen for 2-3 days, it should be safe for a one day flight. No leakage or fumes.
