I just saw a TV program from Italy and someone was making these...it 
reminded me to dig out my recipe.........
The old Nonna who gave me this recipe never made it quite the same way...
but she made it every New Years Eve for dinner or for New Year's Day...
and if you were invited for a meal then, you took part in the fight to make
sure you had at least two!!!  No joke!
  
    Most people I know prefer them fried rather than broiled, but either
way, they're sure to be a hit!

                  Sicilian Rice Croquettes (ARANCINI)

Ingredients

1 lb. white rice  (preferably Arborio)
 4 eggs  (separated)
1/2 C grated Parmesan cheese
1 lb. Mozzarella cheese, cut in 16 cubes  (fresh is best)
1/4 lb. Genoa salami, cut in small pieces  (or your
       favorite meatballs or meatball mixture)
1-1/2 c. Italian bread crumbs
 Olive oil  (don't you have an unending supply at your house?)
 spaghetti  sauce  (any red sauce you prefer)

 
Directions

Cook rice until sticky. Let cool. Mix rice, egg yolks, and grated cheese in
large bowl. 
Form rice mixture into balls the size of oranges,  and make an indentation in
the center
of the ball (like a bird's nest).  Then tuck a piece of Mozzarella and a
couple pieces of
salami (or a meatball) into the nest and close up the rice ball.

Beat egg whites. Dip each rice ball in beaten egg whites and 
 then roll in bread crumbs. Drizzle with olive oil and broil on all sides or
fry in
deep  fryer until well-browned, but not burned.

To serve, split open and top with meat sauce. Makes 14 to 16.

 Once you get the hang of making these, you'll love them............
they really are yummy............!
