ps the winner soup for me this past week has been this easy spinach one (vegan
version totally works; I haven't tried to make it gf but I'm sure it's
possible):
Make a little roux:
* melt 2 tbsp butter or margarine in the bottom of a soup pan, stir in a
tbsp of flour so it sizzles but doesn't burn
* add about 3/4 cup of milk or water, a little bit at a time, and stirring
as it thickens
then:
* add 1 veggie bullion cube
* add in a bunch of spinach (a lb? or one of those small tubs, or half of a
big tub)
* stir until the spinach is all wilted/cooked
* blend it in a blender or with an immersion blender till smooth
and:
* top with a sliced boiled egg if you wish...
