I went through preferences and did not find options for contacts or calendars.
I only found options for books, aps, music, movies, TV shows, ring tones,
iTunes U, and a few others. Contacts or calendar was not listed there. At
least not that I found.

Do control and comma together when in the Itunes menus to get to preferences,
Now you should be able to tab through and uncheck with the space bar those
options you do not want synced.

How on earth can I tell iTunes not to sync my contacts and calendar everytime I
sync my phone? All I want to sync is the music and aps I download, not the
contacts or calendar.
