Double The Life Of Vine Ripened Tomatoes

Store the tomatoes upside down. That way, you will prevent the mold formation, 
bacterial growth and moisture loss that commonly occur at the stem end, so the 
fruit will stay fresh for over a week..

Great Beef Dishes

Beef And Sausage Chili

1/2 pound chorizo sausage, remove from casing

1 tablespoon vegetable oil

1 1/2 pounds boneless chuck, cut into 1 inch cubes, patted dry

1 cup chopped onion

1 green pepper, chopped

1 large clove garlic, minced

1 cup beef or chicken broth

1 cup chopped, canned tomatoes

1 1/2 tablespoons chili powder

1/2 teaspoon cumin, optional

1/2 teaspoon crushed red pepper

1/2 teaspoon salt

1/4 teaspoon pepper

1 tablespoon chopped, canned jalapeno pepper, optional, for hot chili lovers

1 can chili beans, optional

Cook chorizo in a large, heavy saucepan, stirring often. After 10 minutes, 
drain off fat. Remove sausage. In same pan, heat oil. Add beef, a few cubes at 
a time. Saute until well browned. Remove. Repeat with remaining beef. In the 
saucepan, add the onion and green pepper. Saute briefly until slightly 
softened. Stir in garlic. Return chorizo and beef to saucepan. Add broth, 
tomatoes, chili powder, cumin, if used, crushed red pepper, salt, pepper and 
jalapeno, if used. Bring to a simmer. Cover. Either cook on top of the stove or 
in a 350 degree oven for about 1 1/2 to 2 hours. Add chili beans, if used. Cook 
another 30 minutes, uncovered. Serve piping hot.

Tips:

Any spicy sausage can be used in place of chorizo. But be sure to add the 
sausage because it makes a real chili!

Microwave Directions:

1/2 pound chorizo sausage, remove from casing

2 tablespoons all-purpose flour

1 1/2 pounds boneless chuck, cut into 1 inch cubes

2/3 cup beef or chicken broth

1 scant cup chopped, canned tomatoes

1 1/2 tablespoons chili powder

1/2 teaspoon cumin, optional

1/2 teaspoon crushed red pepper

1/2 teaspoon salt

1/4 teaspoon pepper

1 tablespoon chopped, canned jalapeno pepper, optional, for hot chili lovers

1 can chili beans, drained, optional

In a 3 quart microsafe casserole, microwave the chorizo on high for 2 minutes. 
stir once. Drain. Remove chorizo. In same casserole, add oil, onion, green 
pepper and garlic. Microwave on high for 2 minutes, stirring once. Dust beef 
cubes with flour. Add meat to casserole. Microwave, covered, on high for 7 to 8 
minutes, or until no pink remains. Stir after 5 minutes. Stir in chorizo and 
remaining ingredients, except the beans. Cover. Microwave on medium for 20 to 
30 minutes, or until meat is tender. Stir once or twice. Stir in beans, if 
used. Microwave, uncovered, on medium-high for 10 to 15 minutes. Let stand, 
covered, 10 minutes and then serve.

Makes 5 to 6 servings.

Ski Lodge Pot Roast

3 pounds chuck or rump roast, bone removed and rolled if using chuck

2 tablespoons oil

2 medium onions, chopped

3 green peppers, seeded, coarsely chopped

1 tablespoon minced fresh ginger

1 teaspoon minced garlic

1/2 cup soy sauce

1/4 cup broth

2 tablespoons cornstarch

Heat oil in a heavy pot. Brown the roast on all sides. Remove to a plate. Set 
aside. Stir in the onions and green pepper. Saute until onion is golden brown. 
Stir in the ginger and garlic. Cook for a minute. Stir in the soy sauce and 
broth. Add the meat, covering with some of the vegetables. Cover. Cook at 325 
degrees for about 2 1/2 hours. Baste meat occasionally. When meat is tender, 
remove to a separate platter. Strain the broth into a saucepan. Skim off the 
fat. In small bowl, combine 1/2 cup broth with cornstarch, mixing until smooth. 
Heat broth in saucepan. Slowly stir in cornstarch mixture. Stir and cook until 
thickened. Add the reserved vegetables to the gravy. Heat. Slice meat. Pour 
some of the gravy over the meat. Serve the rest in a gravy boat

Microwave Directions:

3 pounds chuck or rump roast

2 tablespoons oil

2 medium onions, chopped

1 tablespoon minced fresh ginger

1 teaspoon minced garlic

1/2 cup soy sauce

2 tablespoons cornstarch

If using a chuck roast, have it boned and tied. Trim off fat. In a microsafe 3 
quart casserole, combine the oil, onions and green pepper. Cover. Microwave on 
high for 3 minutes. Stir in the ginger, garlic and soy sauce. Add the roast. 
Cover with some vegetable mixture. Cover tightly. Microwave on high for 15 
minutes. Microwave on medium for 50 minutes. Turn meat over halfway through 
cooking time. Check meat for tenderness. Remove meat to a platter. Cover with 
foil and keep warm. Strain the juices, reserving the vegetables. Skim off the 
fat. Combine 1/2 cup of pan juices with cornstarch, stirring until mixed. Stir 
into remaining pan juices. Microwave on high for 4 to 5 minutes, stirring 
occasionally. When bubbling, add vegetables. Microwave on high for 1 minute. 
Pour some of gravy over the sliced meat, spooning out some of the vegetables. 
Serve the remaining gravy in a gravy boat. Serve hot.

Remember:

The broth is eliminated from this version.

Makes 6 to 8 servings.

Michael's Night

At the prodding of my friends, I am writing this story. My name is Mildred 
Hondorf.

I am a former elementary school music teacher from Des Moines, Iowa. I've 
always supplemented my income by teaching piano lessons - something I've done 
for over 30 years. Over the years I found that children have many levels of 
musical ability. I've never had the pleasure of having a prodigy though I have 
taught some talented students. However I've also had my share of what I call 
'musically challenged' pupils.

One such student was Michael. Michael was 11 years old when his mother, a 
single Mom, dropped him off for his first piano lesson. I prefer that students, 
especially boys, begin at an earlier age, which I explained to Michael. But 
Michael said that it had always been his mother's dream to hear him play the 
piano.

So I took him as a student. Well, Michael began with his piano lessons and from 
the beginning I thought it was a hopeless endeavor. As much as Michael tried, 
he lacked the sense of tone and basic rhythm needed to excel. But he dutifully 
reviewed his scales and some elementary pieces that I require all my students 
to learn.

Over the months he tried and tried while I listened and cringed and tried to 
encourage him. At the end of each weekly lesson he'd always say, "My mom's 
going to hear me play someday."

But it seemed hopeless. He just did not have any inborn ability. I only knew 
his mother from a distance as she dropped Michael off or waited in her car to 
pick him up. She always waved and smiled but never stopped in.

Then one day Michael stopped coming to our lessons. I thought about calling him 
but assumed because of his lack of ability, that he had decided to pursue 
something else. I also was glad that he stopped coming, he was a bad 
advertisement for my teaching!

Several weeks later I mailed to the student's homes a flyer on the upcoming 
recital.

To my surprise Michael (who received a flyer) asked me if he could be in the 
recital.

I told him that the recital was for current pupils and because he had dropped 
out he really did not qualify.

He said that his mother had been sick and unable to take him to piano lessons 
but he was still practicing. "Miss Hondorf, I've just got to play!" he insisted.

I don't know what led me to allow him to play in the recital. Maybe it was his 
persistence or maybe it was something inside of me saying that it would be all 
right.

The night for the recital came. The high school gymnasium was packed with 
parents, friends and relatives.

I put Michael up last in the program before I was to come up and thank all the 
students and play a finishing piece. I thought that any damage he would do 
would come at the end of the program and I could always salvage his poor 
performance through my curtain closer.

Well, the recital went off without a hitch. The students had been practicing 
and it showed. Then Michael came up on stage. His clothes were wrinkled and his 
hair looked like he'd run an eggbeater through it. "Why didn't he dress up like 
the other students?" I thought. "Why didn't his mother at least make him comb 
his hair for this special night?"

Michael pulled out the piano bench and he began. I was surprised when he 
announced that he had chosen Mozart's Concerto #21 in C Major.

I was not prepared for what I heard next.

His fingers were light on the keys, they even danced nimbly on the ivories. He 
went from pianissimo to fortissimo. From allegro to virtuoso. His suspended 
chords that Mozart demands were magnificent! Never had I heard Mozart played so 
well by a person his age.

After six and a half minutes he ended in a grand crescendo and everyone was on 
their feet in wild applause.

Overcome and in tears I ran up on stage and put my arms around Michael in joy. 
"I've never heard you play like that Michael! How'd you do it?"

Through the microphone Michael explained: "Well Miss Hondorf, remember I told 
you my Mom was sick? Well, actually she had cancer and passed away this morning 
and well... She was born deaf so tonight was the first time she ever heard me 
play. I wanted to make it special."

There wasn't a dry eye in the house that evening.

As the people from Social Services led Michael from the stage to be placed into 
foster care, I noticed that even their eyes were red and puffy, and I thought 
to myself how much richer my life had been for taking Michael as my pupil.

No, I've never had a prodigy but that night I became a prodigy, of Michael's!

He was the teacher and I was the pupil for it is he that taught me the meaning 
of perseverance and love and believing in yourself and maybe even taking a 
chance in someone and you don't know why.

Where there is sadness, I hope I brought some laughter. Where there is grief, I 
hope I offered some comfort. Where there is hate, I hope some love was found 
here. Where there is doubt, I hoped I showed you words of faith.
