Rob,
I'd suggest (from fairly extensive experience) using 8-ply mat board (100%
rag is best). The foam center will show with the cut, rather beveled for
straight if you use foam core; it is, after all foam core. 
8-ply is hard to cut, but worth the effort.

Does anyone have experience using foamboard for over matting a print?

I have never used foam board and am wondering how well or otherwise it cuts.

What I want to do is make an overmat which has a moderately deep bevel and
I'm thinking that 3 or 5 mm board would do this.
However, before ordering board I would like to know wether the bevel cut
shows a smooth cut which does not have visible "foam holes" or whether all
foam boards have the look of "emantal cheese" along the bevel?

I'm thinking the Bainbridge archival foam board should be OK but I'm not
sure.  My local framer reckons foamboard is difficult to cut in different
directions but I have read (somewhere) that good quality foamboard can leave
a perfectly smooth cut which doesn't need finishing with gouache or
something similar.

Any help / suggestions on this would be appreciated.
