This is likely very much a regional thing. When I first moved into my
home, it was brand new construction with new pipes going out to the water
mains. I experienced upwards of a full stop a variability in film development
the first year of using my darkroom. Suspecting the problem was changes in
water mineralization as the pipes coated up, I switch to distilled and
the variability disappeared.
If you have a well established water supply that's been in place for a long
time, it's less likely this would be an issue, though well water high in
minerals could present a problem.
DW is very cheap where I live so I use it for all developers, fixers, and
toners. Its one less gremlin I have to worry about. YMMV.
