Look for books on cocoa over on the Apple site and there's at least one book on cocoa interface on empowermentzone.com. That should get you going well on the Mac side of things and well on your way towards getting things working with Linux. The accersizer software package can be used by you so you'll get an idea how well you're doing with Linux accessibility with respect to Orca too.
