I'm also using thunderbird.It can be configured to ressemble vaguely outlook express if you disable preview panels and set to open each message in separate windows instead of tabs. That's what I have done.
IMO, the greatest function ever of thunderbird is the quick filter. Very powerful and impossible to forget it once given it a taste.
I used windows live mail some time when I have just been switched to W7 but there are very annoying jaws / script bugs that make it not so pleasant to use.
