I made enchiladas last night from Nagi’s recipe after turning my left over
pork roast into carnitas. Tweaked a bit but turned out very yummy. Made her
enchilada sauce as as she said, can’t get US chilli powder elsewhere.
Turned out quite yummy with corn and black beans mixed with carnitas. Even
found a chipotle cheddar cheese to top it😜🤪
Presentation not good but here is dinner last night. Bit difficult getting
enchiladas out the dish neatly! 😜

Last night we had roast pork with veggies, one being roasted cauliflower
cheese. First time I have roasted cauliflower, and it was so delicious
could make a meal out of that alone. I was wondering what to do with all
the leftover roast and thought carnitas might work as could tenderise the
pork in the slow cooker per Nagi so it could be pulled.

Here is last night’s roast dinner and not something I do often…too many pans
and washing afterwards, plus makes a mess of the oven on high at first to
make the pork crackling🤔😜. Cracks me up in Spain as a lot of the expats
still love their Sunday roast despite a much warmer climate. 🤔😩

Veggies were the cauli, parsnip, sprouts, carrots, and roast Jersey Royals
(cheating with M&S frozen ones). Gravy of course and apple sauce in cider.
