Hi all,
Last night we had roast pork with veggies, one being roasted cauliflower
cheese. First time I have roasted cauliflower, and it was so delicious could
make a meal out of that alone. I was wondering what to do with all the
leftover roast and thought carnitas might work as could tenderise the pork in
the slow cooker per Nagi so it could be pulled.
Kelly, have you or anyone made carnitas!!?

Here is last night’s roast dinner and not something I do often…too many pans
and washing afterwards, plus makes a mess of the oven on high at first to
make the pork crackling🤔😜. Cracks me up in Spain as a lot of the expats still
love their Sunday roast despite a much warmer climate. 🤔😩

Veggies were the cauli, parsnip, sprouts, carrots, and roast Jersey Royals
(cheating with M&S frozen ones). Gravy of course and apple sauce in cider.
