Well Christmas was a bit of a non-event for Dohn and me, though we had a nice
enough day.
We had pancakes for breakfast. (Not pretty, but very tasty! The ‘plain’ one
actually had butter, stevia, cinnamon and lemon juice – mmm!)

Then I prepared coleslaw for our lunch on the road to the Blue Mountains. The
pic isn’t anything to write home about but I do adore making my own mayo. 30
secs in the stick blender in the jar in which it’ll be stored – done!

I also pan-fried some spice-coated chicken breasts and we had coleslaw, baby
spinach and cold chicken under a big tree in a charming town called Black
Springs.

At about 4pm we arrived at our cute little cottage that is so gorgeously
decked out. So many thoughtful little touches, right down to an umbrella! The
kitchen is stocked with quality pots and pans, knife block, casserole dishes,
dip dishes, serving platters, plastics, cling wrap, baking paper and sandwich
bags, even a salad spinner. And all the staples, including organic olive oil
and apple cider vinegar.

We didn’t have dinner… but that’s okay. We’re usually good with one meal a
day these days. The fridge and freezer are packed with meals from home so
shouldn’t need to eat out too much while we’re here too.
