6 tablespoons vegetable oil
1 tablespoon minced onion
2/3 cup flour
2 cups hot milk
6 oz flaked cooked fish (185gm tin of tuna works)
salt, fresh ground pepper
good pinch of nutmeg
Heat the oil on low/moderate heat, saute the onion
until transparent. Gradually stir in the flour and
cook gently for a couple of minutes. Whisk in the
milk, stirring constantly until the mixture is thick
and smooth. Add the fish, season with salt, pepper
and nutmeg. Cook for another 2 minutes. Remove from
heat. Spread mixture on a plate and refrigerate for
2 to 3 hours.
If you are adding other herbs/spices, omit the nutmeg.
flour for dredging
2 eggs, beaten
1 cup fresh breadcrumbs
Vegetable oil for frying
Form croquettes from the mixture, size can vary from
little bite-size ovals to larger flatter patties as
you prefer. Roll in the flour, dip in the egg, and
coat with breadcrumbs. Set on a plate and put in the
freezer for 30+ minutes. Pour oil in pan until about
1/2 inch deep and heat. Fry croquettes until golden.
