Book recommended by David is pretty good and concise. There is one more from 
Oreilly that I've used (http://oreilly.com/catalog/9780596006211). Besides 
these, Metalink will be your friend and companion , specially their how-to 
articles in Knowledge Base.

Having worked on Oracle Application Server for 5 years now, a word of 
caution... the concepts are *usually* the same across different versions of the 
application server, but it is possible that quite a few things that were 
available or worked in one version will not be there in the next.  Just as an 
example, version 10.1.2 is an entire suite of products (J2EE, LDAP, SSO, 
Reports, Forms, Discoverer, Wireless, Portal, Web Cache etc etc) each having 
its own set of configuration files and logs (theres a lot to learn J ). But the 
next version (atleast numerically) is 10.1.3, which is a sea change (only has 
J2EE, different architecture etc).  So just make sure that you read up on 
version-specific documentation for the detailed stuff.

I went to the App Server Admin I class last year and it was okay, but you could 
learn all that and more just by reading the standard docs and installing and 
playing around with the software on a test machine.

Jared sent some good Oracle E-biz links, but I think that is a good deal 
different from Oracle App Server.
