I'm sure someone will correct me if I'm wrong, but I believe Microsoft changed the way they handle signatures in Office 07. Seems like signatures used to be stored inside the Normal.dot file, but they moved it elsewhere. I'm unaware of a better way to restore signatures than to simply find an old email with your signature in it, copy it, and create a new signature in Office 07.
