Pure conjecture on my part:

I suspect this just links a reference to the email in the contact so that
you can find the email from the contact.  You might use this to link all the
emails sent to members of a club with the club itself as a contact.  Then by
opening the contact for the club you could open the activities page and see
all the correspondence.

It probably does similar things if you use Business Contact Manager with
your Outlook.
