I am fairly familiar with Access - I work with them at work and am able to
get around them when they have been set up but, I want to expand my
education  does any one have a suggestion on where to learn online or a book
to learn from on how to set up a database - I want to be able to use drop
down menus - ex select 1, 2 3 etc...

A local college will usually have a extension service that offers classes.
Sometimes you can find an Access class there. I even think there was a list
member that taught an Access class online. If you want to learn database
design, check out Running Access 2000 by John Viescas ISBN: 1-57231-934-8.
If you want to learn database programming check out Access 2000 VBA
Fundamentals by Evan Callahan ISBN: 0-7356-0592-0

And how large is too large?  HOW big can I make a database? Is there a size
limit - will it crast if it's too big?

These questions and answers depend allot on how you intend to use your
database. When properly designed and implemented, Access 2K database can
contain millions of rows and a file size of ~1g before any issues might
arise. From experience, I know it is possible to create even larger Access
databases, but the number of concurrent users will need to be reduced.
