Most of this stuff is over my head. I can arrange Beach Boy harmonies, but
when it comes to servers and their software I'm lost. My Son is a guy that
has been a computer geek since he was little so he will help me if I do
this.

Chris here again. This may not suit your use case scenario but as mentioned,
I tried Plex a while ago but now days I just stream directly from the file
share.
Specifically, I have samba set up on my linux machine to provide file
sharing to the other devices on the network. So on my windows desktop, I
just browse to the file and play it in Winamp. On the iPhone, I use the
accessible VLC app to do the same.
There are some media server applications here that might be worth a look. To
be honest, I realised I don't need all that librarian and syncing stuff they
do when I can just find what I want in a folder and play it. Currently I
don't but if I wanted to access my stuff from outside I'd use a VPN.
