Hey Josh, I don't know anything about finding jobs that use Apple products but searching something like Monster using keywords like "Macintosh" might be a good way to start. Getting your college to convert will be a really sticky proposition as they probably have site licenses and other bulk purchase agreements. Organizations, unlike you, me or other individuals, usually enter into multi-year arrangements with vendors. They get support, repairs and VIP treatment from the companies from which they buy their products. If they are a PC shop, it's likely that they have a multi-year agreement with FS for JAWS and ZoomText and similar agreements for MS Office and other stuff. The only way a college can change is by letting some of their multi-year contracts lapse and then replacing the PCs with Macintosh computers. This will drive the IT people nuts as they need to support more than one platform and will probably make the finance people a bit uncomfortable as the PCs they had under contract are still quite usable and extending the service and support agreement is a lot cheaper than buying a new fleet of Macs.
