Just like it says, it's an editor, and file types can be defined so that it can handle any kind of file at all. Want to edit an mp3 file, then just define all the fields, tags, music types and so on, and poof, instant mp3 editor. Want to create midi files, then just create a definition that handles the instruments, and poof, instant midi editor.
Want to edit a text file, then just load it in, and you're editing away.
The point is, it can be configured to edit anything at all if you either have, or can create a template file for the kind of file you wish to edit.

This makes it flexible, and usable for just about anything at all, whether it's creating a text file, or changing a disk image on the fly. Admittedly, it's current list of definitions is a bit limited, but that doesn't mean it's useless. Then again, if it doesn't fit your needs, then you're more than welcome to use something else, that's the great thing about computers. And, even nicer, it's cross platform, since it's written in java, so it will work on windows or linux as well.
(though they don't currently have a distribution for linux)
It's just something I thought folks might find interesting, if you don't, no harm done.

Hello all.
I found a program I've been playing with for the past few weeks, and I'm happy to report, that except for a few buttons not being labeled, the application is nearly 100% voice over accessible (at least the parts I tested) There are a few field types we'll need to avoid (such as spinner) but otherwise, you can edit almost anything using file carver. Entering data is straight forward (though vo doesn't talk specifically during typing in the edit fields) and new file types can be defined to handle just about anything you like. I'd imagine (given enough knowledge and time) this could be used to edit mp3 file tags as well, though I don't know enough about mp3 headers to create such a definition for the program.

I'm currently using it for several things such as a book shelf (modified the default definition that came with it since it's spinner page type didn't work, and I don't care how many pages are in a book anyhow) and a shopping/grocery list, as well as keeping track of various programming tasks, and more. It really can act as a database program, even a spreadsheet with limited capabilities if you need that sort of thing.

Hope this helps some, and please do post here if you have problems using it, as I'm fairly sure I've found work-arounds for most of them.
