Here are the apps I use daily. Some are included with the mac but most must be downloaded. This isn't a complete list as I have nearly 500 apps but these are the ones that come to mind.

Open office. 12. audio hijack pro. 13. Nicecast. 14. iTunes. 15. NTFS for mac. 16. VMWare fusion. 17. front row. 18. simple synth 19. the unarchiver. 20. skype. 21. Adium. 22. Syrincs. I use GarageBand5 first of all. We have a recording studio here as well and we have done 2 CDs this year and 2 in the works.
I record multi track, use Effects, Move loops when I need them and extend them, move media in to projects, do voiceovers with ducking, record internet interviews with iChat and the list goes on. Then I polish, or, enhance my project with Amadeus Pro.
