Vicky, yes, GB 10 is an entry level version of Logic proX and a good place to
get familiar with structure and performance.
I still begin my projects in GB 6.0.5 mainly for simplicity while developing my
ideas, not getting caught up with technical issues and distracted from my
creativity.
Nature sounds, you may like to invest in a hand held recorder like the Zoom H1,
easily controlled by a blind user, go out and gather your own.

I used GarageBand for years until I switched to Logic and it does a nice
job. Here is an older guide on GB that may be of some help to you as you
learn it. It was written a few years ago so it may be a little out of date.
