I think the trouble is how Evolution works. I vaguely remember
that these same issuse were among the problems I just couldnt deal
with. You'd think they'd have changed this after all these years, but
it's as the creator likes.
Three really are many, many other mail apps, if you want a gui.
Google mail. I'm sure you'll find something that suits.
Just a suggestion.
