I think it *is* more complicated than that.

I have this set in my .procmailrc:

MAILDIR=$HOME/mail

and mail still goes to /var/spool/mail by default, unless a procmail recipe
tells it to do otherwise.

However, in /etc/postfix/main.cf:

# The mail_spool_directory parameter specifies the directory where
# UNIX-style mailboxes are kept. The default setting depends on the
# system type.
# 
#mail_spool_directory = /var/mail
mail_spool_directory = /var/spool/mail
