I never used the make uninstall command before, but it is only logical that it
should exist.

Shouldn't this behavior be automatic?
`make uninstall` (in the old source tree) should remove any old tables.
This removes all the tables it knows about. It doesn't remove any tables you
installed manually.
After that do a `make install` in the new source tree.
